Zucchini Cake
Ingredients
- 3 cups flour
- 3 cups sugar
- 1 1/2 teaspoons cinnamon
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups canola oil
- 3 cups grated zucchini
- 4 eggs
- 1 cup chopped nuts, optional
Frosting
- 8 ounces cream cheese, softened
- 1/2 cup butter, softened
- 2 teaspoons vanilla
- powdered sugar
Directions
Heat oven to 300° F. Grease and flour a 13-inch by 9-inch baking dish.
Sift together the flour, sugar, cinnamon, baking soda, baking powder, and salt in a large bowl. Add in the oil and mix well. Beat in the eggs one at a time, alternating with the zucchini. Pour into the prepared baking dish, and bake 75 - 90 minutes.

Beat together the cream cheese, butter, and vanilla. Gradually beat in powdered sugar, until the icing takes on a thick, creamy consistency. Spread over the cooled cake.
